The Holiday Cocktail – The Method
WHere is a home-style take on a beverage featured on a new drinks list. This is a batch prepared mix which is loaded with tastes of the Christmas time, making it excellent for your festive gathering. Any leftover citrus syrup for breakfast cocktails, puddings, or to mix another batch of bikinis.
Bikini Recipe
Serves 10 servings
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Combine all the components into a pan, heat until it reaches a simmer, mixing so the sugar melts. Then, remove from the heat allowing it to cool down completely. Transfer into an sealable bottle, seal and refrigerate it chilled, it will last for around one month.
For the Cocktail Base: Mix the specified liquids into a sizeable container, allow it to infuse for an hour, then filter it best through muslin, making it perfectly clear.
When ready to serve: Add 85ml of the premix to a mixing glass filled with ice, and agitate lightly for about 60 seconds until cold. Filter into an frosted cocktail glass or similar, decorate with a few cranberries adding the final touch using a light spray of the essential oil over the top.
